Apple Sauce

Ingredients

6-8 Apples
3/4 cup water
1/3 to 1/2 cup sugar (or to taste)
1/2 tsp. ground cinnamon
1/4 tsp. nutmeg (optional)


Instructions for chunky applesauce
  1. Wash, peel, core and cut into chunks. Combine with water and cook over medium low heat until fruit is desired consistency.
  2. Stir frequently and watch carefully as applesauce may tend to scorch.
  3. Add the sugar and spices.
Instructions for smooth applesauce:
  1. Wash and cut apples into slices.
  2. Combine with water and cook until very soft,stir frequently to avoid scorching.
  3. Put sauce through a food mill or strainer to remove peels, seeds and core.
  4. Add sugar and spices.

Serving suggestions: Serve warm or cold with s prinkle of cinammon and some arrowroot or other tea biscuits.

Apple Butter

Ingredients

8 cups of apples, peeled and seeded
1 cup of fresh cider
1/3 cup brown sugar


Instructions:
  1. Cook the apples in cider over medium heat until soft. Process to sauce-- texture in food processor
  2. Place the raw sauce in a large dutch oven or casserole.
  3. Add sugar and a spice bag of made cheesecloth containing 3 whole cinnamon sticks, 3 cloves and 1 allspice.
  4. Bake at 300 degrees for one hour. Check for flavor and texture. The sauce should be thick and rich.
  5. Drop a spoonful onto a dish; if a puddle of juice forms around it in the next few seconds the sauce is not done yet.
  6. Place in sterile jars and process 10 minutes in boiling water bath.
Serving Suggestions & Notes: You can use ground spices instead of the whole spices, but the flavour will not be as obvious.
Caution: If the sauce is cooked too long it grows runny again and over spicy.

Apple crisp with Streusel topping

Ingredients

5- 6 cups apple slices
3/4 cup sugar
1 cup flour
1 tsp baking powder
3/4 tsp salt
1 egg
1/3 cup solid shortening (e.g. Crisco)
1/2 tsp cinnamon


Instructions:
  1. Preheat the oven to 350L
  2. Fill a greased baking dish (approximately 6x10inches) with the apple slices.
  3. Mix together the sugar,flour, baking powder, salt and egg until crumbly.
  4. Sprinkle over apples.
  5. Melt the shortening, cool slightly and pour over apple-flour mixture. Sprinkle with cinnamon.
  6. Bake 30-40 minutes
Serving suggestions and notes:
Serve with hagen daz Honey Vanilla ice cream for a real treat. You can also add raisins, dried sour cherries or dried blueberries to the apple slices for variety.

Apple crisp with rolled oat topping

Ingredients

Filling
4 cups peeled, sliced apples
1/4 - 1/3 c sugar
1 tsp cinnamon
Topping
1 cup rolled oats
1/4 tsp salt
1/2 cup flour 1 tsp cinnamon
1/2 cup brown sugar,
1/2 cup (1 stick) butter or margarine

Instructions:
  1. Preheat oven to 350L
  2. Mix together apples, sugar and cinnamon and spread evenly in a buttered baking dish
  3. Mix dry ingredients together, add butter and blend well with a fork
  4. Spread on top of apples; press down lightly. Bake until topping is brown and apples are tender when tested with a fork, approximately 30-40 minutes

Apple Cherry Crisp

Ingredients

6-8 apples, peeled, cored and cut into chunks
1 cup dried sour cherries
1 cup sugar
3/4 cup quick-cooking oatmeal
1/2 cup whole wheat flour
1/3 cup apple butter

Instructions:
  1. Soak cherries in hot water for 20 minutes or until plumped.
  2. Mix apples, cherries and 1/2 cup sugar in an ungresed casserole dish
  3. Mix together remaining ingredients and sprinkle on top.
  4. Bake 50 minutes at 350 degrees.

Apple Crunch

Ingredients

1 cup water
1/2 cup apple juice
pinch salt
2/3 cup of granola or nine-grain cereal
1 large McIntosh apple, diced (peeled or unpeeled)

Instructions:
  1. Bring to a boil water, apple juice and a pinch of salt.
  2. After about a minute of cooking, stir in apple and cook about five minutes
  3. Remove from heat, and top with cinnamon-sugar to taste

Apple Pie

Ingredients

6 medium apples, cored and sliced
1 cup raisins
1/4 granulated sugar
1 Tbsp. flour
1/4 cup packed light brown sugar
1 unbaked prepared pir crust
1/2 tsp. ground cinnamon
Glaze:

1 large egg 1 tsp. sugar 1/4 tsp. nutmeg


General Info:
Prehat oven to 425 degrees Instructions:
  1. In a large bowl combine, brown sugar, granulated sugar, flour, cinnamon and nutmeg.
  2. Add apples to sugar mixture and stir until coated. Stir in raisins & spoon into prepared pie shell.
  3. Place pie crust ontop of filling, and crimp edges against pan. Cut a couple of steam vents in the piecrust.
  4. Combine beaten egg, and sugar and brush lightly over the top of the pie crust.
  5. Bake approximately 35-40 minutes or until pie is golden brown. Remove and let cool 30 minutes before serving.
