Curried Chicken Rice Salad


3 cups cooked rice
2 cups cooked chicken, diced
1/2 cup celery, sliced
1/4 cup green onions, chopped
1/4 cup sweet red peppers, chopped
1 cup sour cream
1/4 cup mayonnaise
3 Tbs. peach or mango chutney
2 tsp. curry powder
3/4 tsp. seasoned salt
2 Tbs. pinenuts

  1. In a large bowl combine chicken, rice, celery,onions and red pepper.
  2. Add in remaining ingredients except pine nuts and stir well.
  3. Refrigerate 30 minutes to blend flavours.
  4. Remove from fridge & sprinkle with pine nuts and serve.
